Soito Wines, created in 2013, is one of Dão’s youngest and most promising projects. At Quinta do Soito, with an already long wine tradition, two teachers gave wings to the dream of transforming the family farm into a reference producer, with wines of exceptional quality. The Dão region is located in Beira Alta, in the north of Portugal. The vineyards are planted in the sub region of Terras de Azurara, a place with Mediterranean climate and granitic soils. Classic vinification in stainless steel vats with skin maceration. Wine staged in stainless steels tanks for 24 months. Made from a blend of indigenous Portuguese varieties: Touriga Nacional, Alfrocheiro, Tinta-Roriz, Jaen, this rustic but weighty red offers spiced wild black fruit and dried flowers, leather and tealeaf aromas. Grippy and firm it holds great appeal for a similarly rustic meat dishes, spaghetti Bolognese, hearty bean stews, or grilled portobello mushrooms.
